Now, what is Umami, you might ask. Well, humans have 4 basic tastes: Sweet Sour Salty Bitter....& the 5th basic taste, my friend, is Umami. This taste was discovered by a Japanese scientist: Dr. Kikunae Ikeda of Tokyo Imperial University.
Umami gives a kind of meaty flavour and boosts the flavour of dishes without you having to add too much of salt. These food are rich in Umami flavours: seaweed/kombu, tomatoes, green tea, cheese & mushroom.
